Healthy Side Dish—Water Spinach Curry/Kolmi Shak(Shag) Curry.

Today I am posting a healthy side dish recipe made with water spinach. It is very quick and easy to prepare and you need only few ingredients for making this dish. It can be served as a side dish with rice/roti or paratha.

Cooking time – 20 minutes. serve – 4

Ingredients—

  1. Malabar spinach——500 grams.
  2. Potato — 200 grams (peeled and cut into small cubes)
  3. Pumpkin ——-100 grams(peeled and cut into small cubes)
  4. Tomato ——100 grams(chopped)
  5. Onion – 1 (chopped)
  6. Garlic cloves – 4 (chopped)
  7. Dry red chilly – 1
  8. Kalonji/kalojeera – 1/2 tsp.
  9. Turmeric powder – 1/4 tsp.
  10. Slit green chilly – 4
  11. Salt to taste.
  12. Sugar -1/4 tsp.
  13. Coriander powder – 1/2 tsp.
  14. Oil – 2 tbsp.
  15. Wheat flour – 1 tbsp.

Instructions –

Take top portion of the spinach (soft parts) and wash well. Chop roughly, keep aside. Heat oil in a frying pan, add dry red chilly and brown it. Add kalojeera, fry for 30 seconds.Add onion ,garlic and fry for 1 minutes. Add potato,pumpkin, salt, turmeric powder,coriander powder and tomato. Mix well and fry for 2 minutes. Add the chopped spinach, mix and cover the pan. Cook for 3 to 4 minutes (stir in between). Add 1 cup of water and cook till the vegetables are soft. If needed add little water. Now mix the wheat flour and keep cooking till all the water evaporates.

Nutritious side dish——Water Spinach Curry is ready to serve.
