Side Dish For Lunch/Dinner —–Taro Root Fry(Man Kochu Bhaji)

Today I am posting a beautiful side dish recipe of Taro root. It is a little spicy dish but tastes awesome. It is very quick and easy to prepare and with few ingredients. It can be served as a side dish with rice/roti/paratha.

Cooking time – 30 minutes. Serve – 4

Ingredients –

1.Potato – 250 grams.(cubed)

2.Taro root -500 grams(peeled and cubed)

3.Tomato (large) – 1

4.Garlic cloves- 5/6 nos.

5.Cumin seeds – 1 tsp.

6.Turmeric powder – 1/2 tsp.

7.Red chilly powder – 1/2 tsp.

8.Cumin powder – 1/2 tsp.

9.Salt to taste.

10.Sugar – 1/2 tsp.

11.Oil – 50 grams.

12.Slit green chill——4.

Instructions –

Using 1 tsp. of salt boil the cubed taro root for 5 minutes and drain. Set aside. Grind tomato ,garlic into a paste. To this add turmeric, chilly ,cumin powders and 1/2 cup of water and mix well. keep the masala mix aside.

Heat oil in a frying pan, add cumin seeds. When the cumin looks brown add cubed potato and boiled taro roots. Fry on medium heat for 3 to 4 minutes. Add the masala mix, sugar and salt. Saute on slow flame till oil separates. Add 1 cup of water and slit green chilly, cover the pan and cook until the taro and potato are cooked well. If needed add little warm water and cook for few minutes. The dish is ready, remove pan from the heat. Cover the pan and give few minutes standing time. You can add lemon juice and chopped coriander leaves on top. Serve hot.
