A Healthy Side Dish–Fenugreek Leaves Curry(Bitterless)/Methi Shak Curry

Today I am posting a healthy side dish recipe made with fenugreek leaves. Generally fenugreek leaves are little bitter in taste. But this dish is not bitter.You can make it very quick and with few ingredients. It can be served as a side dish with rice/roti/paratha.

Cooking time – 30 minutes. Serve – 4

Ingredients –

1.Fenugreek leaves – 250 grams.

2.Potato (large) – 1 (peeled and cut into small cubes)

3.Tomato – 1 (chopped)

4.Garlic cloves – 4(chopped)

5.Turmeric powder – 1/4 tsp.

6.Coriander powder – 1/4 tsp.

7.Dry red chilly – 1.

8.Salt to taste.

9.Sugar – 1/4 tsp.

10 Slit green chilly – 2

11.Oil – 2 tbsp.

Instructions –

To reduce the bitterness of the dish—–take soft portion of the stems and chop. Then marinate the chopped leaves with 1 tbsp. of salt and keep aside for 10 minutes.After 10 minutes wash the leaves with enough water (2 to 3 times) and keep in a colander.

Heat oil in a frying pan, add dry red chilly and fry till brown. Reduce the heat, add chopped garlic and fry for 1 minute. Add potato,salt——fry for 2 minutes. Add chopped tomato,turmeric and coriander powders and saute for 3 to 4 minutes. Add the chopped leaves,sugar and chilly. Cover the pan and cook on slow flame for 5 to 6 minutes (stir in between).

Remove pan from the heat, cover and give few minutes standing time. Tasty and healthy Fenugreek leaves curry is ready, serve as a beautiful side dish.
