Healthy Evening Snack–Sweet Potato Donut

Hi Friends,

Today I am sharing with you a beautiful evening snacks recipe made with sweet potato. It is very light and looks beautiful. These are so easy and will be ready in minutes. You can add any flavor (cinnamon/vanilla/orange…) and any glaze (sugar/chocolate) OR any toppings (desiccated coconut/ sugar candy/crushed peanuts/chopped chocolate).

Cooking time —–40 minutes Serve – 4

Ingredients —

1.Sweet potato –500 grams.

2.Plain flour (maida) – 250 grams.

3.Baking powder – 1 tsp.

4.Vanilla – 1 tsp.

5.White oil -for deep frying.

Instructions –

Using pressure cooker boil the sweet potatoes until they are little soft (do not over cook the potatoes). Transfer to a colander and remove the skin. Now grate the potatoes (always use fine grater). Mash the potatoes until fine. set aside. Put flour in a mixing bowl. To this add baking powder,vanilla and mix well. Now add mashed sweet potatoes ,combine and knead to form into dough. If you found the dough a little bit sticky–just add a little bit flour.

Now divide the dough into balls. Take a ball,shape it roundly and make a hole in the middle. It looks like a ring. Repeat the steps.

Heat enough oil in a pan. When the oil is hot, reduce the heat. Drop the donut rings into the hot oil. Fry on slow fire until they are cooked to inside and outside and brown in color. Fry 4 to 5 rings at a time. Take out them from the oil, keep aside. Start the next batch.

For coating you can use melted chocolate or coco powder . take 1 tbs coco powder in a micro safe bowl ,To this add 10 grams butter and little milk. Microwave for few seconds and stir well. Coat the top of the donut with the coco powder mix and while not yet dry sprinkle sugar candy/peanut/desiccated coconut.
