Sweet Potato Pancake/Healthy Breakfast Recipe

Hi Friends,

Today I am sharing with you a nutritious dish—–Sweet Potato Pancake recipe. These are so easy and will be ready in minutes. They are very light and loaded with protein and carbs to keep you energized throughout the day .You can add different types of flavor to these pancakes-like vanilla, cinnamon, nutmeg ,orange etc.

Cooking time -30 minutes. Serve – 4

Ingredients

1.Sweet potato – 500 grams.

2.Wheat flour or Plain flour—-100 grams

3.Egg—–2 nos.

4.Baking powder – 1 tbsp.

5.Cinnamon powder – 1 tsp(or vanilla )

6.Salt – a pinch.

7.Butter – 1 tbsp.

Instructions——

Wash the potatoes and using water pressure cook until soft. Now peel the skin off and mash very well. Take a large mixing bowl—–combine the mashed potatoes, flour, baking powder, salt,beaten egg and cinnamon powder. Add little water or milk—–mix well to make e thick batter (like cake batter). The batter should be lump free. Cover the bowl and set aside for few minutes.

Place a griddle on heat. When the griddle is hot reduce the heat. Grease the griddle with butter. Pour a fourth of a cup of batter on it (slightly spread with spatula). Cook one side till it brown. Now flip the cake and cook for 2 to 3 minutes. In this way make all the pan cakes. Serve with honey/ liquid molasses or chocolate syrup. You can decorate with chopped fruits.
