Quick Side Dish For Roti,Paratha/Potato-Pumpkin Curry

Today I am sharing with you a very simple but beautiful side dish recipe for Roti/Paratha. It is a traditional Bengali recipe, easy to prepare and with few ingredients. It is a dry dish, little spicy and takes few minutes to prepare. It goes well with roti/paratha and can be served with rice also.

Cooking time – 30 minutes. Serve – 4

Ingredients –

  1. Potato – 400 grams
  2. Pumpkin — 250 grams.
  3. Tomato – 1
  4. Green peas (fresh/frozen)—1/2 cup.
  5. Cumin seeds – 1/2 tsp.
  6. Mustard seeds –1/2 tsp.
  7. Slit green chilly – 4
  8. Onion (medium) – 1 (chopped)
  9. Ginger -garlic paste – 1 tsp.
  10. Turmeric powder – 1/2 tsp.
  11. Red chilly powder – 1/2 tsp
  12. Cumin powder – 1/2 tsp.
  13. Salt to taste.
  14. Sugar – 1/4 tsp.
  15. Oil – 3 tbsp.

Instructions–

Take potato and pumpkin , peel the skins off and cut into cubes. Boil only potato cubes for 2 minutes and drain. keep aside. Grind tomato into puree. set aside.

Heat oil in a frying pan, when it is hoi reduce the heat add cumin seeds. When the seeds look brown add mustard seeds and allow to splutter. Now add chopped onion, fry till onions are light brown. Add pumpkin and boiled potato, fry for 3 to 4 minutes. Add ginger-garlic, all the masala powders(turmeric,chilly, cumin), green peas and 1/2 cup of water. Saute on slow heat till oil separates. Now grind tomato into a puree and add to the pan. At this stage you can use store-bought tomato puree. Saute for one minute. Add 2 cups of water, salt, sugar, slit green chilly and mix well. Cover the pan and keep cooking till all the water evaporates. Stir in between.

Remove pan from the heat, give 5 minutes standing time. At this stage you can add 1 tsp of ghee.

Delicious Bengali side dish is ready , serve hot. Hope you will like the simple recipe.
