Healthy Breakfast —Mango Crepes (Without Egg)

Hi Friends,

Today I am posting a delicious fruit crepes recipe made with mango. It is a quick recipe, very easy to make and nutritious also. It is a no sugar recipe. So a diabetic can eat moderate amount of mango crepes easily. In that case use water to make the batter and white oil instead of butter.

Cooking time – 30 minutes.  Serve – 4

Ingredients –

  1. Flour –1 cup.
  2. Corn flour – 2 tbsp.
  3. Mango pulp – 1/2 cup.
  4. Salt – a pinch.
  5. Milk – as required.
  6. White oil/butter – 2 tbsp.

Instructions –

Combine flour,corn flour, mango pulp, salt and milk in a large mixing bowl. Beat until the batter is smooth.You can use blender also. Adjust the consistency with milk or water (should have a medium thin batter).Cover the bowl,allow to rest for 10 minutes.

Place a non stick griddle on medium heat. Grease the griddle with butter or oil. Pour 1 ladleful of batter on to the griddle. Rotate the griddle to spread the batter into a circle. When the batter is set and the edges have firmed up flip the crepe and keep on the other side on griddle for few seconds. Take out the crepe from the griddle and place on serving dish. Again grease the griddle and repeat the same process.

Tasty and healthy Mango Crepes is ready, serve with chopped mango. Enjoy.
