Healthy Recipe—Bathua Leaves(Chenopodium) And Vegetables/Betho Shag Recipe

Today I am posting a healthy and tasty dish recipe made with Bathua leaves. Bathua is very nutritious loaded with minerals and vitamins which improve appetite and hemoglobin level. The leaves are loaded with fiber and has laxative properties. To this recipe I have added some winter vegetables. This dish can be served with rice/roti.

Cooking time – 30 minutes. Serve – 4

Ingredients-

  1. Bathua leaves – 500 grams.
  2. Vegetables – 1 bowl (cut into small cubes)
  3. Dry red chill – 1
  4. Nigella seeds(kalojeera)- 1/2 tsp.
  5. Turmeric powder – 1/2 tsp.
  6. Salt to taste.
  7. Oil – 3 tbsp.
  8. Slit green chilly – 2
  9. Sugar – a pinch.

Instructions –

Take some vegetables–like radish, turnip, carrot, eggplant, pumpkin, potato. Cut the vegetables into very small cubes. Wash and keep in a colander, Take the Bathua—–take tender leaves and stems and wash well. Chop as fine as possible. Set aside.

Heat oil in a frying pan, add dry red chilly and fry till brown. Reduce the heat, add kalojeera and fry for 30 seconds. Add the chopped vegetables, salt, turmeric powder and mix well. Cover the pan and fry the vegetables on slow heat for 5 to 6 minutes(stir in between). Add the chopped Bethua, slit green chilly, sugar and mix well. Cover and cook for 5 to 6 minutes. Stir in between. Remove the lid. Stir very well (for 2 to 3 minutes) and remove pan from the heat.

Tasty and healthy Bethua With Vegetables is ready, serve as a side dish with rice/roti.
