A Nutritious Side Dish Of Chayote Squash (Chow Chow)

Today I am posting a beautiful side dish recipe made with Chayote Squash (Chow Chow). It is a non-spicy dish, nutritious and you need only few ingredients for making this awesome dish. The dish goes well with roti/paratha/chapathi.

Cooking time – 30 minutes. Serve – 4

Ingredients –

1.Squash – 500 grams (peeled and cut into cubes)

2.Potato (large) –1(peeled and cut into cubes)

3.Egg – 2 (beaten)

4.Tomato – 1 (chopped)

5.Garlic cloves – 4 (finely chopped)

6.Mustard seeds – 1/4 tsp. (optional)

7.Salt to taste.

8.Sugar – 1/4 tsp.

9. Green chilly – 4 (chopped)

10.Pepper powder – 1 tsp.

11. Oil – 3 /4 tsp.

Instructions – Boil the cubed potato in water for 2 to 3 minutes and drain.

Heat oil in a frying pan, add mustard seeds. When crackling ,reduce the heat and add chopped garlic. Saute for 30 seconds. Add the boiled potato, squash and salt. Mix well and saute for 3 to 4 minutes. Add tomato, chilly and 1/2 cup of water. Saute for 3 to 4 minutes on slow heat. Add 1 cup of water and sugar, mix well. Cover the pan and cook till all the water evaporates and the vegetables are soft well. If needed add little warm water and cook for another few minutes.

Now take out the cooked vegetable from the pan, keep aside. Add 1 tbsp.of oil in the same pan, add the beaten egg. Scramble the egg until set. Mix the cooked curry in it and mix .Stir fry for 3 to 4 minutes .

The Chayote Squash Curry is ready, sprinkle pepper powder and serve hot. Enjoy.
