Quick Nutritious Side Dish With Winter Vegetables

Today I am sharing youth you a very simple and healthy side dish recipe made with winter vegetables. I have made this beautiful dish in pressure cooker. You can make the dish in a frying pan also. It is a non spicy dish(you need only 2 tbsp.of white oil) and takes few minutes to prepare. I have used 7 to 8 vegetables. You can add any vegetables to make the dish more healthy. [Do not waste the long stem of the broccoli. Cut the broccoli into florets, then chop the long stems and use in your recipe]

Cooking time – 30 minutes  Serve – 4

Ingredients –

  1. Broccoli (small)-  1 (cut into florets)
  2. Beetroot – 1 (peeled and cut into cubes)
  3. Carrot – 2 (cut into pieces)
  4. Green peas – 2oo grams.
  5. Potato (medium) – 1 (peeled and cut into cubes)
  6. French beans – 100 grams(cut into pieces)
  7. Tomato (large) – 1(chopped)
  8. Onion (small) – 1(chopped)
  9. Garlic cloves – 4/5 (chopped)
  10. Slit green chilly – 4
  11. Salt to taste.
  12. Sugar – 1/2 tsp.
  13. Cashew nuts – 7/8
  14. Milk – 1/2 cup.(optional)
  15. pepper powder – 1 tsp.
  16. White oil – 2 tbsp.

Instructions-

In pressure cooker put the washed vegetables (broccoli florets and stems, beetroot,carrot,peas,beans,potato). Place the cooker on medium heat. Pressure cook for 1 whistle. Release the steam quickly and transfer the vegetables to a colander. Grind cashew with milk or water and make a puree, keep aside.

Heat oil in a frying pan. Add onion, garlic and fry for 1 minute. Add chopped tomato,salt and all the vegetables. Mix well. Cover the pan and cook for 5 to 6 minutes (stir in between). Add 2 cups of water,cashew paste,sugar and green chilly. stir well. cook for few minutes. Stir occasionally. When the gravy starts thickening, remove pan from the heat. Sprinkle pepper powder, cover the pan,give 5 minutes standing time.

Delicious healthy side dish with winter vegetables is ready. Serve hot with rice/roti or paratha.
