Bitter Gourd Curry/Karela Sabji/Karolar Torkari

Today I am sharing with you a simple side dish recipe made with Bitter gourd. It is a popular Indian side dish recipe and very tasty to eat. It is not a Bengali recipe, because we always like to make Bitter gourd dish without onion and garlic. But it is a fantastic dish, little spicy and tastes awesome. It goes well with steamed rice /roti/paratha.

Cooking time – 30 minutes.  Serve – 4

Ingredients –

  1. Bitter gourd – 250 grams
  2. Potato – 200 grams (peeled and cut into cubes)
  3. Eggplant (small) – 1 (cut into cubes)
  4. Pumpkin – 200 grams(peeled and cut into cubes)
  5. Tomato – 1 (chopped)
  6. Onion – 1 (finely chopped)
  7. Garlic cloves- 4 (finely chopped)
  8. Nigella seeds (kalojeera) – 1/4 tsp.
  9. Turmeric powder – 1/2 tsp.
  10. Red chilly powder – 1/2 tsp.
  11. Coriander powder – 1/2 tsp.
  12. Slit green chilly – 4.
  13. Salt to taste.
  14. Sugar – 1/2 tsp.
  15. Oil – 1 ladle full

Instructions – Discard the seeds of the bitter gourd and chop into thin slices.

Heat oil in a frying pan,add kalojeera and fry for 30 seconds. Add chopped onion and garlic, fry for 1 minute. Add bitter gourd,potato,eggplant,pumpkin and tomato. Add salt and mix well. Cover the pan and cook on slow flame for 4 to 5 minutes(stir in between).Add turmeric,chilly, coriander powders and 1/2 cup of water. saute for 4 to 5 miutes. Add 2 cups of water,sugar and slit green chilly. Cover the pan, and cook for 4 to 5 minutes. Or cook till all the vegetables are soft. If needed add little water and cook for extra few minutes. When the curry becomes dry,remove pan from the heat. Cover and give few minutes standing time.

Delicious Bitter Gourd Curry is ready, serve as a first item for lunch with steamed rice. You can also serve the dish with roti/paratha.
