Makhana – Egg—A Non-spicy Healthy Side Dish

Today I am sharing with you a very simple side dish recipe —–Makhana -Egg. It is a non-spicy dish, nutritious and very quick and easy to prepare. You need only few ingredients for making the beautiful dish. It can be served as a side dish with rice/roti or paratha.

Cooking time – 30 minutes. Serve – 4

Ingredients –

1.Makhana – 200 grams,

2.Potato (large) – 1 (cubed)

3.Cumin seeds – 1/4 tsp.(optional)

4.Garlic cloves – 4/5 (chopped)

5.Slit green chilly – 4

6.Salt to taste.

7.Sugar – a pinch.

8.Oil – 3 tbsp.

9. Tomato (large) – 1 (chopped)

10.Egg – 2 (beaten)

Instructions –

Dry roast the Makhana for 3 to 4 minutes on medium flame, keep aside. Using 2 cups of water and 1/4 tsp.of salt boil the cubed potato for 3 to 4 minutes—–transfer to a colander.

Heat 2 tbsp.of oil in a frying pan. Add cumin seeds. When the cumin looks brown add chopped garlic, fry until fragrant (on slow flame). Add the boiled potato, fry for 2 minutes. Add tomato,salt and green chilly. Saute for 2 minutes. Add 2 cups of water and sugar—allow to boil. Add the roasted Makhana and mix well. Keep cooking till all the water evaporate. Take out from the pan, keep aside.

Add 1 tsp.of oil in the same pan, add the beaten egg. Scramble the egg until set. Now mix the cooked Makhana in it. Mix well and stir for 2 minutes on slow flame. Remove pan from the heat, cover and give 10 minutes standing time.Delicious side dish—–Makhana -Egg is ready. Garnish with chopped green chilly and serve. Enjoy.
