Side Dish For Roti/Paratha—Snake Gourd With Egg/Egg – Chichinga.

Today I am posting a quick and easy to make side dish recipe made with Snake gourd and egg. It is a beautiful dish—non spicy and you need only few ingredients for making this awesome dish. It can be served as a side dish with rice/roti/paratha.

Cooking time – 20 minutes. Serve – 4

Ingredients –

1.Snake gourd — 500 grams.

2. Egg – 2 (beaten)

3.Garlic cloves – 4 (chopped)

4.Mustard seeds – 1/2 tsp.

5.Turmeric powder – 1/2 tsp.

6.Salt to taste.

7. Sugar – a pinch.

8.Slit green chilly – 4

9.Oil – 3 tbsp.

Instructions –

Take the gourds, peel the skin off and cut into very thin pieces. Wash and keep in a colander. Squeeze all the water out with hand. keep aside.

Heat oil in a frying pan, add mustard seeds. When the seeds start to pop add chopped garlic. Fry for 3 to 4 seconds. Add the gourd pieces, salt, turmeric, sugar and green chilly. Mix well, cover and cook for 7 to 8 minutes (stir in between). Now push the gourd pieces to the edges of the pan. Add the beaten egg in it. Scramble the egg until set. Mix the fried gourd with the scrambled egg. Stir for 3 to 4 minutes on low flame.

Remove pan from the heat, cover and give 5 minutes standing time. Delicious Egg-Chichinga is ready to serve.
