Makhana Curry——A Healthy Side Dish

Today I am sharing with you a nutritious but simple side dish recipe made with Makhana (Lotus seed). It is very quick and easy to make and with few ingredients. It is a non-spicy dish, goes well with rice/roti/paratha.

Cooking time – 30 minutes. Serve – 4

Ingredients –

Makhana – 1 bowl.

Potato – 1(peeled and cut into small cubes)

Pumpkin – 250 grams (peeled and cut into small cubes)

Garlic cloves – 4 (chopped)

Tomato – 1 (chopped)

Slit green chilly – 4

Turmeric powder – 1/2 tsp.

Salt to taste.

Sugar – 1/2 tsp.

Oil – 2 tbsp.

Instructions———-

Place a pan on medium heat. Dry roast the Makhana for 6 to 8 minutes (stir continuously). Take out from the pan,keep aside. Add oil in the pan, once oil is hot ,reduce the heat. Add chopped garlic, fry for 30 seconds. Add cubed potato and pumpkin, fry for 3 to 4 minutes. Add tomato, turmeric, chilly and 1/2 cup of water. saute for 3 to 4 minutes. Add 2 to 3 cups of water, salt and sugar. Cover the pan and cook for 5 minutes. Add the roasted makhana and mix well. Cook for few minutes. If needed add little warm water. When the gravy starts thickening remove pan from the heat, cover and give 5 minutes standing time.

Nutritious Makhana Curry is ready, serve with rice/roti/paratha.
