Healthy Oat Thekua (Without Sugar) /Diabetic Dessert

My today’s recipe is Oat Thekua. It is a healthy version of traditional Thekua. Thekua is a famous sweet snacks in Bihar, U.P  and Jharkhand made during Chat Puja and other festivals,traditionally made with flour, sugar/jaggery and ghee/oil. Today I am sharing healthy Thekua recipe made with oat,dates and very little oil/ghee. It is a awesome recipe and perfect for Diabetics.

Cooking time – 45 minutes.  Serve – 4

Ingredients –

Quick Oats – 1 cup.

Plain flour (Ata) – 1 cup.

Coconut (desiccated/grated) – 1 cup.

Dates (chopped) – 1 cup.

Fennel seeds (mouri) – 2 tbsp.

Veg oil (or ghee) – 2 tbsp. (for the dough)

Veg oil —-for frying.

Instructions –

Grind the dates into a paste, keep aside.Grind the oats into a powder and transfer to a large mixing bowl. To this add all the ingredients (except oil for frying) and mix well. Knead and make a hard dough. If needed add little water. But remember the dough is not soft,it has to be hard. Make balls from the dough and press them flat. Keep aside.

Heat little oil in a flat pan. Once it is hot reduce the heat. Arrange the Thekuas on the hot oil. Shallo fry them on both sides till golden brown in color. You can deep fry the Thekua in enough oil. Fry 5 to 6 Thekuas at a time. Take out from oil, keep on paper towels. Allow to cool in room temperature.

Crispy and yummy healthy Oat Thekua is ready, garnish and serve. Enjoy.
