Beat The Heat With Cucumber Stew/Bengali Shoshar Sukto

Today I am posting a very simple and healthy ——-Cucumber Sukto recipe. Cucumber is one of the best vegetable that can eat in summer.They are extremely hydrating, which make them an ideal for summer. Cucumber sukto is very tasty to eat and very quick and easy to prepare. It goes well with only plain rice.

Cooking time – 30 minutes.  Serve – 4

Ingredients –

  1. Cucumber – 500 grams.
  2. Mustard seeds – 1 tsp.
  3. Bay leaf – 1
  4. Ginger paste – 1/2 tsp.
  5. Turmeric powder – 1/4 tsp.
  6. Salt to taste.
  7. Sugar – 1/2 tsp.
  8. Oil – 1 tsp.
  9. Ghee – 1/2 tsp.
  10. Wheat flour – 1 tbsp.

Instructions –

Peel the skins off  and wash the cucumbers well. Then cut into small pieces. Heat oil in a frying pan, add the mustard seeds. When crackling add the bay leaf and cucumber pieces. Stir for 2 minutes. Add salt,ginger paste and turmeric powder. Mix well and saute for 3 to 4 minutes.Add 2 cups of water and sugar. Cover the pan and cook till the cucumber pieces become soft. Dissolve wheat flour in 1/4 cup of water and add to the pan. Mix well and cook for 2 minutes. If needed add warm water.

Remove pan from the heat, mix ghee. Cover the pan and allow it to cool completely.

Nutritious Cucumber Sukto is ready, serve as a first item for Lunch.
