Quick Side Dish— Pumpkin With Egg.

Today I am posting a quick and easy to make side dish recipe made with pumpkin and egg. It is not a traditional Bengali dish, but tastes delicious. It is a dry dish, non-spicy and you need only few ingredients to prepare this awesome dish. It goes well with roti/chapati/paratha/luchi.

Cooking time – 20 minutes.  Serve – 4

Ingredients –

  1. Ripe pumpkin – 500 grams.
  2. Nigella seeds (kalojeera) – 1/2 tsp.
  3. Garlic cloves – 4 (peeled and finely chopped)
  4. Slit green chilly – 4
  5. Salt to taste.
  6. Sugar – 1/4 tsp.
  7. Egg – 2 (beaten)
  8. Oil – 2 tbsp.
  9. Turmeric powder – a pinch.

Instructions –

Take the pumpkin,peel the skin off and discard the seeds cleanly. Then cut into small cubes, wash and keep in a colander. Heat oil in a frying pan, add kalojeera. Fry for 30 seconds. Add the chopped garlic, fry on slow flame until  fragrant. Add the pumpkin,salt and turmeric powder. Stir and cover the pan. Cook on slow flame for 5 to 6 minutes. Stir in between.Now add little water,sugar and slit green chilly. Cover the pan and cook until the pumpkin is soft well well and the liquid has evaporated.

Now push the pumpkin pieces to the edges of the pan to make a well (hole). Add the beaten egg  in it. Scramble the egg until set. Now mix the pumpkin pieces with the scrambled egg and stir for 1 minute.

Remove pan from the heat,cover the pan and give 5 minutes standing time.

Delicious side dish – Pumpkin With Egg is ready, serve with roti/luchi/pararha. Enjoy.
