Side Dish With Pumpkin Flowers/Kumro Fuler Torkari/Veg.Side Dish

Today I am posting a delicious side dish recipe made with Pumpkin flowers. It is a traditional Bengali recipe, very quick and easy to prepare. It is a healthy dish,non spicy and you need only few ingredients to make the dish. It goes well with rice/roti. So if you have too many pumpkin flowers, make this beautiful dish.

Cooking time – 20 minutes.  Serve – 4

Ingredients –

  1. Pumpkin flower – 20 nos.
  2. Potato (large) – 1 (peeled and cut into small cubes)
  3. Nigella seeds(kalonji) – 1/2 tsp.
  4. Turmeric powder – 1/4 tsp.
  5. Green chilly – 2.
  6. Slit green chilly – 2
  7. Coriander powder – 1/2 tsp.
  8. Salt to taste.
  9. Sugar – 1/4 tsp.
  10. Oil – 1 ladleful.
  11. poppy seeds- 2 tbsp.

Instructions –

Wash the flowers, remove the stem and stigma from each flower and chop roughly. Wash the potato cubes. Grind 2 green chilly,poppy seeds(with 1/2 cup of water) into a paste.

Heat oil in a frying pan, add kalonji. Fry for few seconds. Add the potato,salt and turmeric powder. Fry for 2 minutes. Add coriander powder, green chilly-poppy seeds paste and 1/2 cup of water. Saute till oil separates. Add 1 cup of water, let it brings to boil. Add the chopped flower,slit green chilly and sugar. Mix well. Cover the pan and cook till all the water evaporates (stir in between).

Remove pan from the heat, cover and give 5 minutes standing time.

Delicious pumpkin flowers curry is ready, serve with steamed rice or roti.
