Sweet Potato Malpua (In Uttapam Pan)

Today I am posting a healthy and delicious sweet recipe made with sweet potatoes——it is Sweet Potato Malpua. It is nutritious because it is a less oil recipe,I used Uttapam pan for making this delicious sweet. Sweet potato is very healthy. It is also good for Diabetes. You can serve the sweet to a diabetic patient easily.(Avoid sugar and add little amount of pure jaggery). The process of making the sweet is very simple and you need only few ingredients. The mini Uttapam Pan is very useful. You can make large no. of malpuas at a time.

Cooking time – 30 minutes.  Serve – 4

Ingredients-

  1. Sweet potato – 300 grams.
  2. Semolina (suji) –  2 tbsp.
  3. Flour (atta/maida) – 2 tbsp.
  4. Sugar/Jggery(crushed) – 2 tbsp.
  5. Milk (cow/coconut) – 1/2 cup.
  6. Black cardamom seeds – 1 tbsp.
  7. Veg. oil – 1/2 cup

Instructions –

Put the potatoes(with skin) in a pressure cooker. Add water and pressure cook till 2 whistle(on medium heat). Allow to cool the cooker naturally. Transfer the potatoes to a colander and peel the skins off. Put the boiled potatoes in a large bowl and mash them well. To this add semolina, flour,sugar,milk and black cardamom seeds. Mix /whisk  them and make a thick batter. Add water if needed. The batter should be smooth pouring consistency(like cake batter). Cover the bowl, allow it to rest for 30 minutes.

Place Uttapam Pan on medium heat. Pour little oil in each mold. Add 1+1/2 tbsp.of batter in each mold and spread with the back of the spoon. Cook till brown from both sides. Take out the fried malpuas from the pan, keep on paper towels. Again add oil and start the next batch.

Tasty and healthy Sweet Potato Malpua is ready, you can garnish with Raisins or dry fruits.
