Fuchka Recipe

Cooking time – 30 minutes   Serve – 4

Ingredients –

Plain flour(ata/maida)  – 1 cup.

Semolina (suji) – 1 cup.

Oil for deep frying.

Instructions –

Take flour and semolina in a large mixing bowl. Mix them very well. Add water little by little and start kneading. The dough should not soft, nor too hard. Again start kneading. It is very important for making Fuchka. The Dough should be elastic. Put the dough in a air tight container or cover with a lid. Allow it to rest for 30 minutes.

After 30 minutes knead the dough for 5 to 6 minutes. Make small balls (like small glass-marble) with the dough. Roll each ball into thin circle. Do not roll the balls too thin but roll evenly. No need to grease the rolling surface. If needed grease with just one drop of oil at first time. Place the rolled circle on a flat surface without them touching each other. No need to cover them.

Heat enough oil in a frying pan, Once oil is hot slide(quickly) 4 to 5 circles into the hot oil and slightly press with spatula. Now reduce the heat and flip, fry until all the sides are brown brown. take out the fried Fuchka with a slotted spoon, keep on paper towels. Again increase the heat and start the next batch. Always slide the Fuchka into hot oil, otherwise it will not puff up well.

Easy to make Fuchka is ready. Serve with mashed potato mixture and tamarind water. Enjoy.
