Today I am posting a simple side dish recipe made with Drumsticks. It is a diabetes friendly dish,very quick and easy to prepare. Drumsticks could reduce the blood sugar level. To this recipe I have used eggplant, urad dal,tomato and moderate amount of sweet potato,which are good for diabetes. It is a veg. dish and good for everyone.
Cooking time – 30 minutes. Serve – 4
- Drumsticks – 300 grams.(Cut into pieces)
- Eggplant (large) – 1 (cut into cubes).
- Sweet potato – 1 (peeled and cut into cubes)
- Tomato (large) – 1 (chopped)
- Urad dal – 2 tbsp.(Soaked)
- Slit green chilly – 4
- Cumin seeds – 1/2 tsp.
- Mustard seeds – 1/2 tsp.
- Turmeric powder – 1/2 tsp.
- Wheat flour – 1 tbsp.
- Salt to taste.
- Oil – 1 tsp.
Heat oil in a frying pan. Reduce the heat,add cumin seeds. When the cumin looks brown,add mustard seeds. When mustard seeds start to pop add soaked urad dal. Saute for 30 seconds. Add all the vegetables,salt,turmeric powder and stir well. Cover the pan and cook on slow heat for 3 to 4 minutes.(Stir in between). Add 2 to 3 cups of water and cover the pan. Keep cooking till all the water evaporates (stir in between). Dissolve wheat flour in 1 cup of water and add to the pan. Mix well. Cook until there is no liquid left (stir occasionally).
Remove pan from the heat,cover and give 5 minutes standing time. Tasty and healthy Drumstick Curry is ready. Serve with Rice/Roti/Paratha.
