Today I am posting a diabetes friendly side dish recipe made with Spinach. Spinach is very nutritious. It is low in calories and can help prevent and control diabetes. There are many ways to prepare Spinach. Today I am sharing Bengali style Spinach recipe. It is a simple recipe, non spicy,less oily and very quick and easy to prepare and with few ingredients.
Cooking time – 20 minutes. Serve – 4
- Spinach – 500 grams.
- Nigella seeds (kalojera) – 1/2 tsp.
- Dry red chilly (small) – 1
- Slit green chilly – 2.
- Salt to taste.
- Oil – 1/2 tsp.
Wash the Spinach well and chop roughly. Heat oil in a frying, add dry red chilly and fry until brown. Reduce the heat. Add nigella seeds,stir fry for 30 sec. Add the chopped Spinach and salt. Mix well and cover the pan. Cook in slow heat for 5 to 6 minutes(stir in between). Uncover the pan. Add 1/2 cup of water and green chilly. Cover the pan and keep cooking till all the water evaporates (stir in between).
Remove pan from the heat, give 5 to 6 minutes standing time. Healthy Spinach dish is ready, serve with plain rice.
