Today I am sharing with you a delicious recipe made with Potatoes. It is a Indian style side dish that is quick and easy to prepare. It is a simple dish, very tasty to eat and served with Roti/Paratha.
Cooking time – 40 minutes. Serve – 4.
1.Potato – 500 grams(peeled and cut into cubes)
2.Tomato – 1 (chopped)
3.Onion (large) – 1 (chopped)
4.Ginger paste – 1/2 tsp.
5.Garlic paste – 1/2 tsp.
6.Turmeric powder – 1/2 tsp.
7.Chilly powder – 1/2 tsp.
8.Cumin powder – 1/4 tsp.
9.Salt to taste.
10.Sugar – 1/4 tsp.
11.Pepper powder – 1/2 tsp.
12.Cumin seeds – 1/2 tsp.
13.Mustard seeds – 1/2 tsp.
14.Fenugreek seeds – 1/4 tsp.
15.Oil – 1/2 cup.
1.Wash the potato pieces and boil for 4 to 5 minutes with 1 tsp.of salt. Quickly transfer to a colander. Grind onion and tomato into a paste. To this add turmeric,chilly,cumin,ginger,garlic and 1/2 tsp.of water and mix well. Keep the masala mix aside.
2.Heat oil in a frying pan, add the boiled potatoes and fry till light brown. Take out from the oil.
3.Add cumin seeds in the remaining oil. When the cumin look brown, reduce the heat. Add mustard seeds. When they splutter add fenugreek seeds and fry for 30 seconds. Add the masala mix and saute till oil separates. Add the fried potato,sugar and salt. Saute for 2 minutes.Add 2 cups of water,let it bring to boil. Keep cooking till all the water evaporates.
Remove pan from the heat,cover and give 10 minutes standing time. Shukha Aloo is ready to serve. Place it on serving dish and sprinkle pepper powder. You can garnish with chopped coriander leaves and Lemon slices. Serve the delicious dish with Roti/Chapati/Paratha.
