Festive Recipe With Popped Rice (Khoi)/Bengali Murki (Upra) Recipe

Today I am sharing with you a simple sweet dish recipe made with Khoi and Jaggery. It is a traditional Bengali recipe and very quick and easy to prepare. The dish is very tasty and very popular in both West Bengal and Bangladesh. In Bengal it is called ‘Upra’ and prepared during festivals like Lakhsmi Puja,Saraswati Puja etc.

Cooking time – 5 to 7 minutes.   Serve –4

Ingredients –

1.Khoi – 250 grams

2.Jaggery/Molasses – 250 grams.

Method – Put Khoi in a large bowl, keep aside. Put jaggery and 1 cup of water in a frying pan. Place the pan on heat (medium). Stir continuously for 2 minutes. Reduce the heat and cook till it become like gum (stir continuously). Take out the pan from the heat and slowly spread the warm jaggery over the Khoi and stir continuously with a spatula. In this way mix jaggery with the Khoi. Allow it to cool completely.

Famous Bengali sweet Upra is ready to serve. It can be stored for future use.
