Today I am sharing with you a popular curry dish recipe made with various vegetables. It is a traditional Bengali recipe, non-spicy and very tasty to eat. In Bengal it is called Labra Torkari and served as a side dish with Khichuri (Hotch Potch).It goes well also with Rice or Roti. You can use any Vegetable you have in hand. The dish is very simple and easy to prepare.[You can add Banana stem, sweet potato, Barbati etc.]
Cooking time – 40 minutes. Serve – 4.
1.Radish (must have) – 500 grams (cut into small slices)
2.Potato – 1 (peeled and cut into cubes)
3.Eggplant – 1 (cut into cubes)
4.Pumpkin – 250 grams (peeled and cut into cubes)
5.Ridge gourd – 250 grams (peeled and cut into squares)
6.Pointed gourd – 200 grams (peeled and cut into pieces)
7.Dry red chilly – 2
8.Panch Foran (5 spices mix) – 1 tsp.
9.By leaves – 2
10.Turmeric powder – 1/2 tsp.
11.Salt to taste.
12.Sugar – 1/2 tsp.
13.Ginger paste – 1/2 tsp.
14.Slit green chilly – 4
15.Roasted cumin and coriander powders – 2 tbsp.
16.Wheat flour – 1 tbsp.
17.Oil – 3 tbsp.
18.Ghee – 1 tbsp.(optional)
1.Add 1 tbsp.of cumin seeds and coriander seeds in a frying pan, dry roast on slow heat until brown and grind to a powder. Transfer the powder to a small bowl and cover the bowl. Keep aside.
2.Wash all the vegetables and soak in water for 10 minutes and drain. Heat oil and ghee in a frying pan, add dry red chilly and fry until brown. Reduce the heat, add Panch Foran and bay leaves. Fry until the spices give out their aromas. Add all the vegetables,salt,turmeric powder, ginger paste and mix well. Cover the pan and cook for 4 to 5 minutes (stir in between). Add 2 cups of water,sugar and slit green chilly. Cook on medium heat until the vegetables are cooked. Sprinkle wheat flour and mix well. Keep cooking till all the water evaporates (stir continuously).
Remove pan from heat, add roasted cumin powder and mix well. Cover the pan and give 10 minutes standing time. Delicious Vegetables Curry is ready, serve with Khichuri/Rice/ Roti.
