Today we are making Chitoi Pitha – a traditional Bengali dish made with rice flour batter. The Pitha is very easy to make. The Pitha is served with liquid palm date jaggery which is only available in winter season. So Chitoi Pitha is generally made in winter. You can take this pitha with curry also.
Cooking time – 45 minutes. Serve – 4.
1.Rice flour – 250 grams.
2.Curd – 2 tbsp.
3.Baking powder – 1/2 tsp.
4.Salt – 1/4 tsp.
5.White oil – 2 tbsp.
1.Take rice flour in a bowl, add salt and baking powder and mix well. Add curd and mix. Then add water little by little to make a thick batter.Beat well so that there is no lumps in the batter. The batter should be a smooth pouring consistency (like pancake batter).Allow it to rest for 30 minutes.
2.Grease a pan with oil and heat in high flame. Pour 2 tbsp. of batter into the pan and reduce the heat. After 1 minute cover the batter with a small steel bowl and sprinkle 2-3 tbsp. of water around the bowl, cook for another 3-4 minutes (or until the pitha is done). Remove the steel bowl and take the pitha out with a spatula. Repeat the process with remaining batter.
Chitoi Pitha is ready to serve. You can garnish with grated coconut. Serve Chitoi Pitha with palm date jaggery or curry.
