My today’s recipe is Beetroot Curry – a healthy side dish made with beetroot and vegetables. The dish is very tasty and simple to prepare. If you want to make a healthy side dish for lunch or dinner you can make the dish easily. In this dish you can use any vegetables you have in hand.
Cooking time – 40 minutes. Serve – 4.
1.Beetroot (large) – 1 (peeled and cut into small cubes)
2.Potato (medium) – 1 (peeled and cut into cubes)
3.Green peas – 1/2 cup.
4.Green chilly – 2 (chopped)
5.Onion (small) – 1 (chopped)
6.Tomato (small) – 1 (chopped)
7.Ginger paste – 1/2 tsp.
8.Garlic paste – 1/2 tsp.
9.Cumin seeds – 1/4 tsp.
10.Sugar – 1/4 tsp.
11.Salt to taste.
12.Turmeric powder – 1/4 tsp.
13.Oil – 2 tbsp.
14.Ghee – 1 tbsp.
1.Heat oil in a frying pan,add cumin seeds. When it becomes brown add onion. Stir fry till onion is transparent. Add potato and beetroot, stir fry for 3-4 minutes. Add tomato,turmeric,ginger-garlic paste and 1/2 cup of water. Saute for 5-6 minutes. Add green peas,sugar,salt,green chilly and 1/4 cup of water. Saute for 3-4 minutes. Add 1 – 11/2 cups of water,let it bring to boil. Cover the pan with lid and cook until the vegetables are cooked and there is no liquid left. If needed add little water.
2.Remove pan from heat, add ghee and mix well. Cover the pan and give 10 minutes standing time. Beetroot Curry is ready, serve as a side dish with rice / roti.
