My today’s recipe is Chicken Vindaloo – a spicy chicken curry prepared in Goan style. It is a rich chicken delicacy. The curry is rich in flavor and tasty to eat. It is easy to prepare at home.
Cooking time – 1 hour. Serve – 5
1.Chicken – 1 k.g.(cut into medium pieces)
2.Onion – 400 grams.
3.Tomato – 250 grams.
4.Ginger – 1 inch.
5.Garlic flakes – 8
6.Vinegar – 4-5 tbsp.
7.Curry leaves – 8-10 (optional)
8.White oil – 100 grams.
10.Sugar – 1/4 tsp.
11.Salt to taste.
12.Turmeric powder – 1/2 tsp.
13.Chilly powder – 1 tsp.
14.Cumin powder – 1tsp.
15.Pepper powder – 1 tsp.
16.Garam masala powder – 1 tsp.
1.Wash chicken well and drain excess water.
2.Grind onion,ginger,garlic and mustard seeds into a paste. In a bowl combine the paste, all the masala (turmeric,chilly,cumin,pepper,garam masala),vinegar,2 tsp.of oil, 2tsp. of salt and make a paste. Rub the paste all over chicken. Marinate for 2-3 hours. After 3 hours remove chicken and reserve the marinade.
3.Heat oil in a frying pan, stir fry curry leaves for 1 minute. Add tomato,saute for 2-3 minutes. Add the marinade,sugar and 1/4 cup water,saute until the raw smell of the masalas goes off. Add chicken,saute for 10-12 minutes on slow flame.Add little hot water if needed.
4.Add 11/2 – 2 cups of hot water and little salt, let it bring to boil. Cook till the chicken becomes tender and the gravy is thick in consistency. Check the seasoning. Remove pan from heat.cover and give 10 minutes standing time.
Chicken Vindaloo is ready to serve, garnish with fried curry leaves and serve with rice/roti/paratha.
