Today I am sharing with you a very simple but delicious side dish recipe made with Ash Gourd and Coconut. The dish is non-spicy and nutritious. It is a traditional Bengali recipe,very quick and easy to prepare and with few ingredients.
Cooking time – 30 minutes. Serve – 4
Ingredients –
1.Ash Gourd – 500 grams.
2.Shredded coconut – 1/2 cup.
3.Cumin seeds – 1/2 tsp.
4.Dry red chilly – 2.
5.Bay leaves – 2.
6.Salt to taste.
7.Sugar – a pinch.
8.Ghee – 1 tsp.
9.Oil – 2 tbsp.
10.Slit green chilly – 4.
Method –
1.Take the Ash Gourd and peel off the skin and wash well. Using a grater grate it well.Boil the grated gourd in 2 cups of water for 3 to 4 minutes and drain.
2.Heat oil in a frying pan, add red chilly. Stir fry until brown. Reduce the heat,add cumin seeds. When the cumin looks brown add Ash gourd and salt. Cover the pan and cook for 5 to 6 minutes (stir in between). Add shredded coconut, sugar,green chilly and 1/2 cup of water. Keep cooking till all the water evaporates. Add ghee and mix well. Remove pan from heat,cover and give 10 minutes standing time.Delicious Ash Gourd curry is ready, serve it with Rice or Roti.
