Veg. Eggplant Curry/Begun Borir Torkari

Today I am sharing with you a delicious veg. side dish recipe made with eggplant and bori (sundried urad dal dumplings). It is a traditional Bengali recipe and very quick and easy to prepare. It is a simple dish but very testy to eat. You can take it as a side dish with rice/roti and paratha.At the end you can add chopped coriander leaves.

Cooking time – 30 minutes.  Serve – 4

Ingredients-

  1. Eggplant – 500 grams (cut into cubes)
  2. Potato – 250 grams (peeled and cut into small cubes)
  3. Bori – 8 pieces
  4. Tomato (large) – 1 (chopped)
  5. Coriander leaves(chopped) – a handful
  6. Slit green chilly – 4
  7. Cumin seeds – 1/2 tsp.
  8. Mustard seeds – 1/2 tsp.(optional)
  9. Turmeric powder – 1/2 tsp.
  10. Chilly powder – 1/2 tsp.
  11. Cumin powder – 1/4 tsp.
  12. Coriander powder – 1/2 tsp.
  13. Salt to taste.
  14. Sugar – 1/2 tsp.
  15. Oil – 1/2 cup.
  16. Ghee – 1 tsp.

Instructions – Soak the eggplant cubes in water for 5 minutes. Transfer to a colander. Take a  bowl. To this add turmeric, chilly,cumin,coriander powders and 1/2 cup of water. Mix well. keep the masala mix aside.

Heat oil , add the bori and fry till brown. Take out from the oil, keep aside. Add eggplant cubes in the remaining oil and fry till light brown. Take out from the oil, keep aside. Add cumin seeds in the remaining oil, fry till light brown. Add mustard seeds, when start to pop add potato cubes. Fry for 2 to 3 minutes. Add tomato, masala mix and sugar. Saute till oil separates. Add 2 to 3 cups of water. Let it brings to boil. Add fried eggplant, bori, salt,slit green chilly. Cover the pan and cook for 5 to 7 minutes.

Remove pan from the heat, add ghee and coriander leaves, mix . Cover the pan and give 10 minutes standing time. Delicious eggplant gravy is ready. Serve hot with rice/roti/paratha.
