Veg.Recipe–Ash Gourd Gravy/Chal Kumror Curry

Today I am sharing with you a traditional Bengali side dish recipe made with Ash gourd. It is a simple recipe, tasty,healthy and very quick and easy to prepare. To make the gravy more tasty I Added some gram flour pakoras . This delicious dish goes well with rice or roti/paratha.

Cooking time –30 minutes  Serve – 4

Ingredients –

  1. Ash gourd – 500 grams.(Peeled and cut into cubes)
  2. Potato – 1 (peeled and cut into small cubes).
  3. Red chilly(broken) – 1
  4. Bay leaf – 1
  5. Cumin seeds – 1/2 tsp.
  6. Turmeric powder – 1/2 tsp.
  7. Coriander powder – 1 tsp.
  8. Slit green chilly – 4
  9. Salt to taste.
  10. sugar – 1/2 tsp.
  11. Wheat flour – 1 tbsp.
  12. Oil – 1/2 cup.
  13. Ghee – 1 tsp.
  14. Gram flour (besan) – 1/2 cup
  15. Baking soda – a pinch.

Instructions –

Take gram flour in a bowl. To this add salt,a pinch of turmeric and sugar,baking soda and 1tsp oil. Mix all the ingredients properly. Now add water little by little to make a thick paste. Beat the paste for 2 minutes.

Heat oil in a frying pan. Reduce the heat. Make some small pakoras with the paste.(Fry the pakoras on slow flame till brown. increase the heat and take out with a slotted spoon). Keep the fried pakoras aside.

Add red chilly in the remaining oil, fry till light brown. Add cumin seeds, fry till brown.Add bay leaf and potato cubes, fry for 2 minutes. Add Ash gourd pieces, saute for 2 minutes. Add turmeric,coriander and slit green chilly. Saute for 3 to 4 minutes. Add 3 to 4 cups of water, salt and sugar. Cover the pan and cook for 5 to 6 minutes (stir in between). Add the fried pakoras, stir gently. Add little warm water if needed. Cover the pan,cook for 2 to 3 minutes. Dissolve wheat flour in 2 tbsp.of water and add to the pan, mix well. Cook for 2 minutes.

Remove pan from the heat, mix ghee. Cover the pan and give 10 minutes standing time.

tasty and healthy Ash gourd gravy is ready, Serve as a side dish with rice/roti/paratha.
