Instructions –

Boil sugar and water in a pan, stir till sugar is dissolved. Keep cooking till a thick syrup(one thread consistency) is found. Remove pan from the heat, cover and keep aside.

In a large bowl add flour, salt, baking soda and mix well. Now add 1/2 cup of oil/ghee. Rub the flour with oil for 5 minutes. Add little water and knead well to make a nice hard dough. Cover the dough with a wet cloth, allow to rest for 30 minutes.

After 30 minutes knead the dough again. Divide the dough into small balls. Take one ball on a rolling board and roll out into oval (1/4 inch thick).[actually give the ball a tongue shape]. With a knife make 4 to 5 cuts(horizontally) on it (keep the edges intact). Place the rolled ball in a greased tray. Repeat the same process with rest of the balls.

Heat oil in a frying pan, when it is hot reduce the heat. Fry the Gojas on slow flame until light brown on both sides. Fry 3 to 4 Gojas at a time. Warm the sugar syrup. Drop the fried Gogas into the syrup and take out immediately from the syrup.Spread them in a tray. Allow it to cool at room temp.
