Easy To Make Mutton Rogan Josh Recipe.

Today I am sharing with you a Kashmiri Delicacy – Mutton Rogan Josh recipe. It is one of the most popular and delicious dish from Mughlai cuisine. It is rich in spices and colorful. Rogan Josh can be prepared in various way. I have made this beautiful dish in my own way. It is a simple recipe and very easy to prepare.

Cooking time – 45 minutes.  Serve – 4.

Ingredients –

  1. Mutton – 750 grams (cut into medium pieces)
  2. Onion paste – 3 tbsp.
  3. Ginger paste – 1 tbsp.
  4. Garlic paste – 1 tsp.
  5. Fennel (mouri) powder – 1 tsp.
  6. Kashmiri  red chilly powder – 1 tbsp.
  7. Asafoetida (hing) – 1/4 tsp.
  8. Garam masala powder – 1 tsp.
  9. Turmeric powder – 1 tsp.
  10. Red chilly powder  – 1 tsp.
  11. Coriander powder – 1 tsp.
  12. Cumin powder – 1/2 tsp.
  13. Salt to taste.
  14. Oil – 4 tbsp.
  15. Ghee – 2 tbsp.
  16. Bay leaves – 3.
  17. Yogurt – 2 tbsp.
  18. Sugar – a pinch (optional)

Instructions –

  1. Wash the mutton pieces and pat dry. Put the mutton in a large mixing bowl. To this add yogurt, onion,ginger,garlic paste,red chilly,cumin,coriander,turmeric powder,1 tbsp.of salt and 1 tbsp.of oil. Marinate the mutton pieces properly.Cover the bowl and keep in a refrigerator overnight (or atleast 6-8 hours).
  2. Heat remaining oil and 2 tbspoon of ghee in a pan/kadhai in low to medium flame . Add hing (asafetida /asafoetida) and bay leaves.Fry for 30 secs.Then Add the marinated mutton,kashmiri red chilli powder and fennel powder,garam masala powder and sugar.Mix well and saute till the oil separates from the mixture.
  3. Add 4-6 cups of warm water and salt to taste.Cover the pan with lid and let it brings to boil.
  4. Cook with the lid closed till the meat becomes tender and the gravy is medium thick in consistency.Stir occasionally.
  5. Tips: If the mutton remains hard or uncooked,at this stage one can use pressure cooker also.
  6. Remove pan from the heat.Mix one tspoon of ghee (optional).Cover and give 10 minutes of standing time.

Delicious Mutton Rogan Josh is ready to server.Enjoy with plain steamed rice/basmati rice.
