Quick And Easy Side Dish – Pointed Gourd (Parwal/Potol) Bharta

Today I am sharing with you a simple preparation of Parwal. It is Parwal Bharta. It is a traditional Bengali recipe, very quick and easy to prepare and with few ingredients. It is a dry dish and very tasty to eat. It goes well with steamed Rice or Roti.

Cooking time – 30 minutes.  Serve – 4.

Potoler Vorta

Ingredients –

1.Parwal (Potol) – 500 grams.

2.Onion – 1 (chopped)

3.Garlic paste – 1/2 tsp.

4.Tomato – 1 (chopped)

5.Nigella seeds (Kalonji) – 1/2 tsp.

6.Green chilly – 2

7.Slit green chilly – 4.

8.Turmeric powder – a pinch.

9.Salt to taste.

10.Sugar – 1/4 tsp.

11.Oil – 3 tbsp.

12.Ghee – 1 tsp.(optional)

Method –

1.Take the Parwals,cut into halves and discard seeds. Wash them and chop roughly. Using 1 cup of water grind parwals,tomato and 2 green chilly into a paste.

2.Heat oil in a frying pan,add Kalonji. Stir fry for 30 seconds. Add onion, fry till onion is light brown. Add the Parwal paste,garlic paste,turmeric powder,sugar and salt. Mix well. Keep cooking with stirring continuously till all the water evaporates. Add ghee and slit green chilly, stir. Cook till oil separates. Remove pan from the heat. Cover the pan,give few minutes standing time.

Delicious Potol (Parwal) Bharta is ready. Serve as a side dish with Rice/Roti.
