Unique Side Dish Recipe – Eggplant Manchurian (Bengali Style)

Today I am sharing with you a simple side dish recipe made with Eggplant (Begun). It is Eggplant Manchurian. I made this unique dish in Bengali style. It is a delicious dish and very quick and easy to prepare. If you have small amount of eggplant in hand, you can easily make the dish.

Cooking time – 30 minutes.  Serve – 4

Ingredients –

1.Eggplant (medium) – 1 (cut into cubes)

2.Onion (large) – 1 (chopped)

3.Finely chopped garlic – 1 tsp.

4.Finely chopped ginger – 1/2 tsp.

5.Slit green chilly – 6.

6.Capsicum – 1 (chopped). It is optional.

7.Chopped onion laves – 4 tbsp.(optional)

8.Soya sauce – 1 tbsp.

9.Tomato sauce – 1/2 tbsp.

10.Salt to taste.

11.Sugar – 1/4 tsp.

12.Turmeric powder – a pinch.(optional)

13.Pepper powder – 1/4 tsp.

14.Veg.oil – 1/2 cup.

15.Corn flour – 1 tbsp.

Soak the eggplant cubes in water for 10 to 15 minutes and drain.Dissolve corn flour in 1/2 cup of water, keep aside.

Ingredients(for the batter) –

1.Flour – 3 tbsp.

2.Corn flour – 3 tbsp.

3.Egg (beaten) – 1.

4.Ginger paste – 1/4 tsp.

5.Garlic paste – 1/2 tsp.

6.Turmeric powder – a pinch.

7.Chilly powder – 1/4 tsp.

8.Soya sauce – 1 tsp.

9.Salt to taste.

Method –

In a large bowl add all the ingredients of the batter and mix well. To this add eggplant cubes and coat well. Heat oil in a frying pan, when hot reduce the heat. Add the coated eggplant cubes and fry till golden brown.Take out the fried cubes from the oil,keep aside.[Group eggplant cubes into 3 to 4 batches, fry each batch till golden brown].

In the remaining oil add onion,ginger,garlic,capsicum and fry for 2 to 3 minutes. Add turmeric,salt sugar,soya sauce,tomato sauce,pepper powder and green chilly. Saute for 1 minute. Add the corn flour batter,mix well. Cook for 2 minutes. Add eggplant cubes and onion leaves, mix well. cook for 2 minutes with stirring continuously.Remove pan from the heat.

Eggplant Manchurian is ready,serve as a side dish with fried rice/roti/paratha.
