Hi Friends,

Today I am sharing with you a veg.side dish recipe made with Eggplant. It is a traditional Bengali recipe and takes few minutes to prepare. In Bengal it is called “Doi Begun”. It is a simple dish but very tasty to eat and goes well with Rice/Roti or Paratha.

Cooking time – 30 minutes.  Serve – 4.

Ingredients –

1.Eggplant – 500 grams.

2.Yogurt – 50 grams.

3.Ginger paste – 1/2 tsp.

4.Turmeric powder – 1/2 tsp.

5.Chilly powder – 1/2 tsp.

6.Coriander powder – 1/2 tsp.

7.Salt to taste.

8.Sugar – 1/2 tsp.

9.Oil – 1/2 cup.

10.Ghee – 1 tsp.

11.Slit green chilly – 4.

12.Cumin seeds – 1/2 tsp.

Method –

1.Cut the eggplants into thick strips and soak in water for 10 minutes and drain. Marinate the eggplant strips with 1 tsp.of salt and a pinch of turmeric powder,keep aside. Take a bowl, to this add yogurt,ginger,turmeric,chilly,coriander powder and mix well. Keep the masala mix aside.

2.Heat oil in a frying pan. Group eggplants strips into 3 to 4 batches.Fry each batch till light brown. Take out from oil,keep aside.

3.Add cumin seeds in the remaining oil. When the cumin looks brown, add the masala mix. Saute till oil separates. Add 1 cup of water,salt,sugar and let it bring to boil. Add the fried eggplant and mix gently. Keep cooking till all the water evaporates (stir occasionally). Add ghee and slit green chilly,mix gently. Remove pan from the heat,cover and give 10 minutes standing time.

Delicious Dahi Brinjal is ready,serve with Rice or Roti/Paratha.
