Parwal – Rice Curry/Pointed Gourd – Rice Curry/Chal – Potol

Today I am sharing with you a simple curry recipe made with Parwal and Rice (Fine quality/Gobindo Bhog Rice).It is a traditional Bengali recipe and very easy to prepare. The curry is very tasty to eat and takes few minutes to prepare.

Cooking time – 35 minutes.  Serve – 4
Ingredients –
1.Parwal – 250 grams.
2.Rice – 150 grams.
3.Onion – 1 (chopped)
4.Garlic paste – 1/2 tsp.
5.Ginger paste – 1/2 tsp.
6.Tomato – 1 (chopped)
7.Cumin seeds – 1/2 tsp.
8.Bay leaves – 2
9.Turmeric powder – 1/2 tsp.
10.Cumin powder – 1/2 tsp.
11.Chilly powder – 1/2 tsp.
12 Salt to taste.
13.Sugar – 1/4 tsp.
14.Oil – 1/2 cup.
15.Ghee – 1 tsp.
16.Garam masala powder – 1/2 tsp.
17.Raisins – 2 tbsp.
19.Slit green chilly – 4.
Method –
1.Scrape the Parwals and slit in both ends. You can cut Parwals into halves. Marinate Parwals with 1/2 tsp.of salt and a pinch of turmeric powder. Keep aside. Wash and soak rice in water for 10 minutes and drain. Grind tomato and onion to a paste. To this add ginger,garlic,chilly,cumin and turmeric. Keep the masala mix aside.
2.Heat 2 tbsp.of oil in a frying pan,add rice. Fry for 2 minutes on slow heat. Take out the fried rice from the pan,keep aside.
3.Heat 5 tbsp.of oil in the same pan. Fry the Parwals till light brown, take out from the oil keep aside. Add cumin seeds and bay leaves in the remaining oil. When the cumin seeds look brown add the masala mix and 1/2 cup of water. Saute till oil separates. Add the fried rice and 11/2 to 2 cups of water. Cook over medium heat until the rice are cooked. Add parwals,salt,sugar,slit green chilly and 1/2 cup of water and mix well. Keep cooking till all the water evaporates.
Remove pan from heat,mix ghee and garam masala powder. Cover the pan,give 10 minutes standing time. Delicious Parwals-Rice curry is ready,garnish with Raisins and serve with Rice/Roti.
