Tasty Side For Roti/Chapati – Flattened Rice With Eggplant/ Bengali Chira Beguner Torkari.

Today I am sharing with you a delicious side dish recipe made with Flattened Rice and Eggplant. It is a traditional Bengali recipe and very quick and easy to prepare. It is a simple dish but very tasty to eat. You can take it with Rice but it goes well with Roti/Chapati.

Cooking time – 35 minutes.  Serve – 4.
Ingredients –
1.Flattened Rice – 100 grams.
2.Eggplant (large) – 1 (cut into medium pieces)
3.Tomato – 1 (chopped)
4.Ginger paste – 1/2 tsp
5.Garlic paste – 1/2 tsp.
6.Cumin seeds – 1/2 tsp.
7.Turmeric powder – 1/2 tsp.
8.Chilly powder – 1/2 tsp.
9.Cumin powder – 1/2 tsp.
10.Salt to taste.
11.Sugar – 1/4 tsp.
12.Ghee – 1 tsp.
13.Garam masala powder – 1/2 tsp.
14.Slit green chilly – 4.
15.Oil – 1/2 cup.
Method –
1.Soak the Eggplant pieces in water for 10 minutes and drain. Take a bowl, add ginger,garlic and all the masala powders (chilly,cumin,turmeric) and 1/2 cup of water and mix well. Keep the masala mix aside. Heat 2 tbsp.of oil in a frying pan, when hot reduce the heat and stir fry Flattened Rice till it turns golden brown. Take out the Flattened Rice from the pan,keep aside.
2.Add oil in the pan. Heat oil and add the Eggplant pieces. Fry till light brown. Take out from oil, keep aside. Add cumin seeds in the remaining oil. When the cumin seeds look brown add onion and fry till light brown. Add the tomato,fry for 1 minute. Then add the masala mix and saute till oil separates. Add the fried Eggplant pieces and 1/2 cup of water, saute for 3 to 4 minutes. Add 1 cup of water,salt and sugar. Let it bring to boil. Add the  Flattened Rice and cook for 2 minutes.
3.When the gravy starts thickening, remove the pan from heat. Add ghee,slit green chilly and garam masala powder. Cover the pan,give 10 minutes standing time. Delicious Curry is ready to serve.
