Side Dish For Roti/Chapati – Pumpkin With Onion

Today I am sharing with you a simple side dish recipe made with Pumpkin and Onion.It is a traditional Bengali recipe and very quick and easy to prepare.It is a common dish of Pumpkin and goes well with Roti/Chapati.

Cooking time – 30 minutes.  Serve – 4
Ingredients –
1.Pumpkin – 500 grams.
2.Onion (large) – 1 (chopped)
3.Dry red chilly – 2
4.Nigella seeds (kalonji) – 1/2 tsp.
5.Slit green chilly – 2
6.Turmeric powder – 1/4 tsp.
7.Salt to tste.
8.Sugar – a pinch(optional)
9.Oil – 3 tbsp.
Method –
1.Take the Pumpkin and peel the skin off. Wash it and cut into thin stripes (like French fry). Cut the onion into thin slices.
2.Heat oil in a frying pan, add dry red chilly and stir fry until brown. Reduce the heat, add kalonji and fry for 30 seconds. Add the onion slices, fry till onion slices look translucent. Add Pumpkin, salt sugar,turmeric powder and green chilly. Mix well and cover the pan. Cook on slow heat for 8 to 10 minutes (stir in between). If needed sprinkle water and stir well.
3.Remove pan from the heat, cover and give few minutes standing time. Delicious Pumpkin dish is ready, serve as a side dish with Roti/Chapati.
