Side Dish For Roti/Chapati – Kundri (Ivy Gourd/Tindora) Curry.

My today’s recipe is Kundri Curry. It is a traditional Bengali recipe, very quick and easy to prepare. The dish is very simple but delicious and goes well with Roti or Chapati.

Cooking time – 30 minutes.  Serve – 4
Ingredients –
1.Kundri – 250 grams. (cut into 4 pieces lengthwise)
2.Onion – 1 (finely chopped)
3.Tomato – 1 (finely chopped)
4.Cumin seeds – 1/2 tsp.
5.Dry red chilly – 2
6.Ginger paste – 1/4 tsp.
7.Garlic paste – 1/2 tsp.
8.Turmeric powder – 1/4 tsp.
9.Cumin powder – 1/4 tsp.
10.Slit green chilly – 4
11/Salt to taste.
12.Sugar – 1/4 tsp.
13.Oil – 2 tbsp.
14.Ghee – 1 tsp.(optional)
Method –
1.By adding 1 tsp of salt boil the Kundri pieces in 2 cups of water for 2 minutes. Transfer to a colander. Keep aside.
2.Heat oil in a frying pan,add dry red chilly and stir fry until brown. Add cumin seeds. When the cumin looks brown add onion and fry till light brown. Add the boiled Kundri stir fry for 3 to 4 minutes. Add tomato, ginger,garlic,turmeric,cumin powder and 1/2 cup of water. Saute till oil separates. Add 1 cup of water,sugar,salt and slit green chilly. Keep cooking till all the water evaporates (stir occasionally). Add ghee, mix well.
Remove pan from the heat, cover and give 5 to 6 minutes standing time. The delicious Kundri Curry is ready to serve.
