Jute Leaves Fritters / Bengali Pat patar Bora

Hi friends,
Today I am sharing a very delicious snacks recipe made with Jute Leaves. It is a home made deep fried snacks and very popular in Bengal. It is served as a starter with steamed rice. In Bengal it is called Pat patar Bora, simple to prepare and requires a few ingredients.

Cooking time – 20 minutes.  Serve – 4
Ingredients –
1.Jute leaves – 1 bunch.
2.Flour – 1 cup.
3.Rice flour – 2 tbsp.
4.Turmeric powder – 1/4 tsp.
5.Salt to taste.
6.chilly powder – 1/4 tsp.
7.Oil  –  tsp. (for the batter)
8.Oil for deep frying.
9.Baking soda – a pinch.
Method –
1.Take the shoots with tender leaves from the stem. Wash gently and keep in a colander. (Do not chop the leaves). Arrange the leaves of the shoots neatly and keep in a tray. Take 8 shoots for making 8 fritters.
2.In a large bowl add flour and rice flour, mix well. To this add turmeric,chilly,salt,baking soda and 1 tsp.of oil. Add water to make a thick batter (pouring consistency) Beat the batter well. Keep aside for 10 minutes.
3.Heat oil in a frying pan, when hot reduce the heat. Take 1 shoot dip in the batter and drop in hot oil. Fry on slow flame until brown and crispy on both sides.Fry 2 or 3 shoots at a time. Increase the heat and remove from oil with a slotted spoon, Drain excess oil in paper towels.
Jute Leaves Fritters is ready. Serve hot as a first item for lunch.
