Vegetable Cutlet / Vegetable Fritters / Vegetable Chop

Hi friends,
Today we are going to make a snack recipe. It is Vegetable Cutlet. It is a street food made with winter vegetables. But you can make the cutlet with any vegetable you have in hand. As a street food it is very popular all over Bengal,very tasty and very easy to make at home.

Cooking time – 45 minutes  Serve – 4
1.Ingredients –
1.Beet root – 1 (peeled and grated)
2.Carrot – 1 (peeled and grated)
3.Cauliflower florets – 4 pieces (grated)
4.Potato – 1 (boiled and grated)
5.Peanuts – 2 tbsp.(fried)
6.Chilly powder – 1/2 tsp.
7.Ginger paste – 1/2 tsp.
8.Sugar – a pinch.
9.Salt to taste
10.Bread crumbs – 250 grams.
11.Egg – 1 (beaten)
12.Oil – 200 grams.
13.Roasted masala – 1 tbsp.
14 Salads & Sauce/ketchup for serving.
Method –
[ For Roasted masala – Red chilly – 1, Bay leaf – 1, Cumin seeds – 1/2 tsp. Coriander seeds – 1/2 tsp. Nigella seeds – 1/4 tsp. Clove – 2, Cardamom – 2, Cinnamon – 1/2 inch, Pepper – 1/2 tsp.]
1.Heat in a frying pan , add all the masalas. Stir continuously on slow flame until the spices light brown and give out their aromas. Grind to a powder. Transfer the powder to a bowl and cover.
2.Heat 2 tsp. of oil in the frying pan, add the grated vegetables,sugar,salt,chilly powder and ginger paste. Saute for 4-5 minutes on slow flame. Add boiled potato, mix well and saute for 2-3 minutes. Add  fried peanuts, mix well and remove pan from the heat. Mix roasted masala powder. Let it cool.
3.In a bowl break the egg,beat well. Keep the bread crumbs in a flat dish. Divide the vegetables mix into small balls, flatten and roll on the bread crumbs. Keep them aside for few minutes.
4.Heat enough oil in a frying pan, when hot reduce the heat. Take 1 flattened ball, dip in the egg, again roll on bread crumbs and drop slowly into the oil.Fry until golden brown on both sides.Fry 2-3 balls at a time. Vegetable Cutlet is ready. Remove the fried cutlets with a slotted spoon and drain on paper towels. Serve with salads and sauce/ketchup as a tea time snack or appetizer.
