Cauliflower Bharta/Cauliflower Dry Curry/Phulkopi-Bhujia

Hi friends,
My today’s recipe is Cauliflower Bharta – a simple cauliflower preparation.It is a popular Indian side dish, very easy to prepare. The dish is very tasty and requires a few ingredients.

Cooking time – 40 minutes   Serve – 4.
Ingredients –
1.Cauliflower – 1 (cut into florets)
2.Onion – 200 grams.(chopped)
3.Garlic flakes – 7
4.Ginger (grated) – 1 tbsp.
5.Tomato – 200 grams (chopped)
6.Bay leaves – 2
7.Turmeric powder – 1/2 tsp.
8.Chilly powder – 1/2 tsp.
9.Cumin powder – 1/2 tsp.
10.Oil – 100 grams.
11.Sugar – 1/2 tsp.
12.Salt to taste.
13.Ghee – 1 tbsp.
14.Garam masala powder – 1 tsp.
Method –
1.Wash cauliflower and boil in salted water for 6 to 8 minutes or boil until just tender. Drain and mash the florets lightly. Heat ghee or 2 tbsp. of oil in a non-stick frying pan and stir fry the florets for 4 to 5 minutes, remove from oil and keep aside. Clean out the pan.
2.Grind onion,ginger,garlic and tomato into a paste. Heat oil in the frying pan, add bay leaves. Stir fry for few seconds then add the ground paste,saute for 4-5 minutes. Add turmeric,chilly,cumin and 1/2 cup of water,Saute until the raw smell of the masalas disappear. Add the cauliflower florets,sugar and salt. Mix well and saute for 5-6 minutes. Add 1 cup of water and cook until there is no liquid left.
3.Remove pan from heat, mix garam masala powder and cover the pan. Give 10 minutes standing time. Cauliflower Bharta is ready to serve. You can garnish with coriander leaves / green chilly . Serve the dish with roti / paratha.
