Red Pumpkin Curry / Pumpkin Cashew Curry / Misti Kumror Torkari

Hi friends,
My today’s recipe is pumpkin cashew curry – a simple side dish of red pumpkin. It is an authentic Indian dish, easy to prepare and requires a few ingredients.

Cooking time – 30 minutes. Serve – 4
Ingredients –
1.Red pumpkin – 1/2 k.g.( peeled and cut into 4 c.m.cubes)
2.Onion – 1 (grated)
3.Tomato – 1 (chopped)
4.Green chilly – 4
5.Sugar – 1/2 tsp.
6.Salt to taste.
7.Oil – 50 grams.
8.Cumin seeds – 1/2 tsp.
9.Fenugreek seeds – 1/4 tsp.
10.Turmeric powder – 1/4 tsp.
11.Cashew nuts – 8-10 
12.Ghee – 1 tbsp.
For garnishing –
1.Coriander leaves – 2 tbsp.(chopped)
2.Green chilly(slit) – 4
Method –
1.Grind cashew nuts and green chilly with 1/2 cup of water to a paste, keep it aside.
2.Heat oil in a frying pan, when hot reduce heat. Add cumin seeds, when it splutters add fenugreek seeds. fry for a few seconds, add onion and fry for 2-3 minutes.
3.Add the pumpkin cubes, fry for 7-8 minutes on medium heat.
4.Add turmeric, tomato, sugar and 1/2 cup of water, saute for 5-6 minutes.
5.Add the cashew paste, saute for 4-5 minutes on slow flame.
6.Add 2 cups of water and salt, let it bring to boil on high heat. (stirring occasionally)
7.Cook till gravy is thick. Remove pan from heat, add ghee. Mix well, cover the pan and give 10 minutes standing time.
Red pumpkin curry is ready to serve. Garnish with coriander leaves and green chilly, serve as a side dish with rice/roti/ paratha.
