My today’s recipe is Palak Paneer – a popular Indian dish consisting of spinach and cottage cheese. Cottage cheese cooked in spinach gravy.The dish is healthy easy to prepare
Cooking time – 40 mins. Serve – 4
1.Spinach – 750 gms.
2.Fenugreek leaves – A handful.
3.Paneer – 250 gms.(Chopped in cubes)
4.Tomato – 1(Chopped).
5.Onion – 1 (Chopped).
6.Ginger paste – 1/2 tspoon.
7.Garlic paste – 1 tspoon.
8.Sugar – 1/2 tspoon.
9.Cumin seeds – 1/2 tspoon.
10.Red chilli pwd.- 1 tspoon.
11.Coriander pwd.- 1 tspoon.
12.Garam masala pwd.- 1/2 tspoon.
13.Green chilli – 4 (Chopped)
14.Oil / Ghee – 6 tabspoon.
15.Heavy cream / Milk – 1/4 cup.
16.Salt to taste.
1.Remove stems and wash spinach and fenugreek leaves. Blanch in salted water with a pinch of baking soda for 3-4 mins. Baking soda keeps spinach greener.
2.Squeeze the excess water and grind the leaves to a paste.
3.Heat oil/ghee in a pan and fry paneer cubes till light brown. Let paneer cubes soak in warm water for 10 mins. It tends to soften the paneer.
4.Heat oil/ghee in a pan,add cumin seeds. When it splutters add onion and fry till golden brown.
5.Add ginger-garlic paste, tomatoes, chilli pwd, coriander pwd, sugar and 1/4 cup of water.Saute till oil separate.
6.Mix spinach- fenugreek paste and salt, saute for 5-6 mins.
7.Add paneer cubes and cream, fold it gently with spinach-fenugreek paste and let it simmer at low flame till oil separate. Add garam masala pwd and green chilli, Mix gently and let it rest for 10 mins.
Palak Paneer is ready. Serve it with roti, paratha and naan.
