My today’s recipe is Mixed Vegetable Pulao – a popular rice dish – filled with lots of vegetables and is easy to prepare.
Cooking time – 40 mins. Serve – 4
1.Basmati rice – 2 cups.
2.Peas (shelled or frozen) – 1/2 cup.
3.Carrot – 2 (Cut into 1 inch.long strips)
4.French bean – 8 (Cut into 1 inch long strips)
5.Cinnamon – 2 sticks.
6.Cardamom – 8
7.Clove – 8
8.Bay leaf – 2 .
9.Cumin seeds – 1 tspoon.
10.Veg. oil – 100 gms.
11. Sugar – 1 tspoon.
12.Green chilli – 2 (chopped)
13.Grated ginger – 1 tspoon.
14.Cashew nut – 10
15.Raisin .- 1 tabspoon.
16.Ghee – 1 tabspoon.
17.Warm water – 3 cup.
18.Salt to taste.
1.Wash rice and soak in normal water for 30 mins. Drain the water from rice and keep aside.
2.Wash all vegetables and keep aside.
3.Heat oil in a thick bottomed pan. Add cumin seeds,bay leaves,cinnamons,cardamoms,cloves. When they start to pop add carrots,beans,peas and cashew nuts. Stir fry for 2 mins.
4.Add rice,stir and fry with vegetables and masalas for 3 mins.(Or till rice turns opaque)
5.Add sugar,salt,raisins,green chilli and water. Stir and let it brings to boil. Reduce heat,cover the pan with a lid, simmer it for 15-20 mins.(Till the rice is cooked)
[ If needed add warm water]
6.Remove pan from heat,uncover and add ghee,cover again and let it rest for 10 mins.
Mixed Vegetable Pulao is ready to serve.
