Chinese Fried Rice/Mixed Fried Rice

Hi Friends,
My today’s recipe is Chinese Fried Rice.It is a popular main course recipe and one of the simplest
one pot meal.

Cooking time – 40 mins    Serve – 2
Ingredients –
1.Rice(long grain)   – 250 gms.
2.Prawns               – 10
3.Egg                  –  2
4.Chicken            – 200 gms.
5.Onion                – 1(grated)
6.Carrot               – 1(grated)
7.Capsicum          – 1(chopped)
8.Pepper pwd       – 1 tspoon
9.Soya sauce       – 1 tspoon.
10.Sugar              – 1/4 tspoon.
11.Veg.oil             – 5 tabspoon.
12.A pinch of ajino-moto and salt to taste.
Method –
1.Shell prawns and wash. Wash and soak the rice for 30 mins in normal water and drain.
2.Boil water in a pan and add rice,1/2 tspoon salt,1/2 tspoon oil and cook until rice is firm and tender.
(Do not overcook the rice as it may turn mushy)
3.Boil chicken with water for 10 mins.Shred chicken.
4.Heat oil in a pan,fry prawns in it. Remove the prawns and clean out the pan.
5.Again heat oil in the pan ,add the chicken to the oil and fry until light brown.Remove the chicken
Add 1 tabs of oil,add the beaten eggs,cook,stirring until they are lightly scrambled.Remove the egg
and clean out the pan.
6.Heat oil in the pan,add onion,carrot,capsicum,sugar and stir fry for 5 mins.Add chicken,prawns,
egg and soya sauce,saute for 2 mins.
7.Add cold rice,season rice with ajino-moto,salt,pepper pwd and mix thoroughly.Cook for 2 mins.
Remove the pan from heat.Serve the hot Chinese Fried Rice on your dinner or lunch.
